Easy Cheesy Eggs (with pan-fried tomato, spinach and avocado)

Best thing about eating a clean diet? Big breakfasts, guilt free! Here is today's choice;
Easy Cheesy Eggs (with pan-fried tomato, spinach and avocado)
Serves 2

Ingredients:
4 free-range eggs (preferably organic)
1/2 cup of grated cheddar cheese
2 large vine tomatoes (home grown is best!)
1 - 2 cups of spinach leaves
1/2 an avocado, sliced  
olive oil for cooking and drizzling 
salt & pepper to taste

Method:
1) Cut tomatoes into thick slices and lightly pan fry in a little olive oil until slightly golden on both sides. Remove from heat. Roughly dice.
2) Meanwhile, beat eggs lightly in a bowl, then mix in cheddar cheese. Pour mixture into a hot pan. Cook until the mixture resembles a pancake and the cheese has melted. Roughly break up the eggs using a turner. 
3) Assemble on a bed of spinach leaves. Add diced pan-fried tomato, cheesy eggs and top with avocado slices.
4) Drizzle with a good olive oil, and add cracked pepper and rock salt to taste.

Easy, super quick, clean eating. A very good morning indeed!
